South Africa only manages to produce about 40% of the local demand for honey. This means that most of the honey available is imported. Imported honey has been heated and pasteurised, which is the requirement when moving honey over international borders. This process destroys the natural enzymes that make honey so desirable, reducing it to a liquid sweetener. Honey from your area is more beneficial to your health, so support your local bee keeper and always look for the “Product of South Africa” mark when buying honey.
Pure honey is not heated, but has only been gravity filtered to remove the impurities and the larger pieces of wax. It often appears buttery and opaque and may contain pieces of beeswax and other impurities. Honey contains pollen, digestive enzymes, antioxidants, propolis, soluble fibre, amino acids, vitamins and minerals, which makes it so healthy.
Beekeepers remove the honeycomb to harvest the honey, but normally replace the honeycomb in the hive as it takes time and energy for the bees to reconstruct. Sometimes, fresh new honeycomb is sold intact to eat.
Raw honey is a potential source of the bacteria Clostridium Botulinum which causes Infant Botulism. While healthy adults and children over the age of 1 year have the mature digestive systems which prevent botulism spores from thriving, infants can be at risk. Therefore, NEVER give raw honey to an infant under the age of 1 year.
